Chris Morris, the owner of a new restaurant in Singapore—The Lime House—explains to the BBC the term “liming” in the context of his home-islands, Trinidad and Tobago; the process of jerking, seasoning, and the uses of rum; his ideas of bringing the Caribbean to Asia; and ultimately, telling the story of the multicultural Caribbean.
BBC reports: “As part of our series on start-up businesses from around Asia, we spoke to restaurant owner Chris Morris in Singapore. He is looking to cash-in on Singaporeans’ well known love for food. His restaurant LIME House is the first of its kind to offer a Caribbean menu in the city-state.
